- 2 medium zucchinis (450g)
- 1.5 oz parmesan, freshly grated (45g)
- 3 tbsp panko (Japanese breadcrumbs)
- 1.5 tbsp olive oil
- 1 tbsp fresh chopped basil
- 1 small garlic clove, finely minced
- 1/4 tsp cayenne pepper
- Sea salt & freshly ground pepper
- Preheat the oven to 425°F. Prepare baking sheet with parchment paper.
- Slice the zucchini into rounds (1/4 inch thick)
- Prepare two shallow dishes: #1 – olive oil, garlic, a dash of sea salt & pepper. #2 – panko, parmesan, cayenne pepper & basil.
- Dip the zucchini slices first into dish #1, then coat them with the mix in dish #2.
- Press the coating on both sides, then arrange the zucchinis on the baking sheet.
- Bake for 25-30mins until browned and the coating is crisp.
- Turn on the other side after 10-15mins.
Keto Classic Deviled Eggs
Prep time: 30mins | Servings: 6
- 6 large eggs
- 2 1/2 tbsp mayonnaise
- 2 tsp dijon mustard
- 1/2 tsp salt
- Dash of pepper
- 1/4 tsp paprika
- 1/2 tbsp fresh spring onion, chopped (optional for decorating)
Bring water to a boil in a medium saucepan. Put the eggs in single-layered once the water boils, boil for 9min. Remove the pot and immediately fill with ice-cold water. Let sit for 5-10mins (this will help with peeling later).
Peel the eggs under a trickle of cold water, then slice in half. Using a spoon, remove the egg yolks, add them to a bowl and lightly mash with a fork. Place the egg whites on a serving platter.
Add the mayonnaise, mustard and salt & pepper to the egg yolks. Mash up well. Evenly distribute the mix into the egg whites, either using a piping bag or a small spoon.
Sprinkle with paprika (and optionally the spring onion) and serve.
Crispy BBQ Chicken Wings
Prep time: 10 mins | Cooking time: 30min | Servings: 4
- 2.2lbs medium chicken wings (1kg)
- 1 tbsp butter (room temperature)
- Spice Rub: 11/2 tbsp paprika
- 1/2 tsp ground black pepper
- 1/2 tsp ground sea salt
- 1/4 tsp chilli powder
- 1/2 tsp garlic powder
- 1 tsp onion powder
- 2 1/2 tbsp erythritol of your choice (e.g Golden Lakanto)
Preheat oven to 430°F
Bring a large coated skillet to medium-high heat. Sear the wings for 2-3mins on each side.
Mix all the ingredients for the Spice Rub with the butter (use a food processor if the butter is too hard). Add the seared wings to the bowl and mix until well coated.
Place wings on a baking tray and spread evenly.
Bake for 15mins, then turn using spoons and bake for another 15mins or until crisp. Check then turn on the grill for the last 5 mins or just bake on “normal” heat until done.

- 2 medium suzzhinis
- 1/2 tbsp olive oil
- 1 cup cream cheese (8oz)
- 1 tbsp sour cream
- 1 garlic clove
- 1-2 tbsp chopped fresh chives
- 1 tbsp chopped fresh parsley
- Sea salt & fresh pepper
Wash zucchinis and cut off the stems. Then slice lengthwise into striped (this is the easiest by using a mandoline)
Bring a large pan to medium-high heat. Add the olive oil and fry the zucchini slices in batches single-layered until golden on each side. Lay a large plate with paper towels. Place the slices on the paper towels once they are done, to remove excess liquid and let cool.
Meanwhile, in a medium bowl, mix the cream cheese and sour cream with a fork to soften up the cream cheese. Then press in the garlic, add the fresh herbs and salt & pepper to taste.
Once the zucchini slices have reached room temperature, add a small portion of cream cheese at one end and roll gently.
Secure with a toothpick if needed.
Bacon-Guacamole Deviled Eggs
prep time: 15mins | Servings: 2
- 4 large eggs
- 2 slices bacon, chopped in bite-sized bits
- 1/2 medium avocado
- 1 small red jalapeno pepper, minced
- 1 tbsp fresh lime juice
- 1 tbsp mayonnaise (homemade)
- 1 tbsp fresh cilantro, chopped
- Salt & fresh pepper
Hard-boil the eggs. Meanwhile, fry the bacon in a pan on medium-high heat until crisp. Set both aside and let cool.
Scoop the avocado into a bowl. Add mayonnaise, lime juice, jalapeno, cilantro and salt & pepper. Mash up with a fork and mix well.
Halve the eggs. Spoon out the yolks, add them to the avocado and mix along with the bacon. Combine.
Using a spoon, fill the egg white halves with the guacamole-bacon mix. Serve immediately or store in the fridge.

- 2 medium avocados, ripe
- 1 small chili
- 1 small tomato
- 1 garlic clove
- 2 small limes, juiced
- Sea salt & fresh pepper
Cut the avocados in half, take out the pit and spoon the flesh into a small bowl.
Chop the tomato in small cubes, mince the garlic and finely chop the chili. Add everything to the bowl along with the lime juice and mash it up with a fork.
Add salt and a little pepper, mix and taste if you need more. Let sit in the fridge for 15-20mins to enhance the flavor (or enjoy right away)

- 1 lb fresh green asparagus (450g)
- 8-10 slices of bacon (ideally center cut)
- 1 tbsp olive oil
- Garlic salt & fresh black pepper
- 1/2 tbsp butter
Preheat oven to 400°F
Cut off the woody ends of the asparagus. Drizzle with olive oil. Sprinkle with garlic salt and black pepper to taste.
Cut the bacon slices length-wise to make narrower strips. Wrap each bacon tightly around an asparagus stalk. let the bacon overlap only slightly on each side. Place the packets seam side down on a baking sheet or rack.
Bake for 10mins, then turn over and bake for another 10-15mins, until bacon is almost crispy. Set the oven to broil, then place under the broiler for 1-2mins to crisp even more.
Serve fresh with a small roll of butter on top.

- 1 lb fresh kale (430g)
- 2 tbsp olive oil
- 1/2 tsp cayenne pepper
- 1/4 tsp cumin
- Dash of paprika
- Sea salt, fleur de sel or equivalent
Preheat the oven to 260°F. Line two baking sheets with parchment paper.
Carefully remove the kale leaves from the stems and tear into bite-sized pieces. Wash thoroughly and pat dry with kitchen paper.
Mix the cumin, cayenne and paprika. Add kale leaves to a large bowl, drizzle with the olive oil, then add the spices and mix carefully.
Place the seasoned leaves on the baking trays and sprinkle with salt.
Bake for 20-25mins, until leaves are crisp. Let cool before eating.
Crispy Bacon Strips w/ Guacamole

- 8-10 strips thick-cut bacon
- 2 avocados
- 1 garlic clove, minced
- 1 lime, juiced
- 1 tbsp cilantro, chopped
- 1 small jalapeno, minced
- 1/4 tsp ground cumin
- 1/4 tsp sea salt
Preheat oven to 375°F
Lin a baking sheet with parchment paper. Lay bacon strips on the sheet and bake for 15-20mins. Remove from the oven.
Cut the avocado in half, remove the stone and spoon out the flesh into a small bowl. Mash up with a fork, then add all the other ingredients. Mix well and taste. Add more seasoning, if needed.
